Sheet Pan Suppers is a new entry into the one pot meals genre. The idea is simple--assemble ingredients on a sheet pan, close the oven door and wait for the magic to happen.
The first recipe I tried was Fajita Flank Steak with Peppers & Onions. When my husband came home from work the first thing he said was "Mmm, it smell like a restaurant in here!" The meal was delicious (we've made it 3 times and counting) and we've subsequently tried--
- Crispy Za'atar Chickpeas
- Quick Chicken & Baby Broccolini with Spicy Peanut Sauce
- Soy Mustard Salmon and Broccoli
- Thick Cut Pork Chops with Warm Apple Cabbage Slaw
- Roasted Crisp-Topped Eggplant with Chickpeas
- Eggs in a Hole in a Bread
All were pretty successful, the pork chops with apple cabbage slaw were a standout and the eggs in a hole (all baked at the same time!) are going on my next brunch for a crowd menu. One tweak to the recipes as written is that I routinely brine chicken breasts before roasting them to help preserve moisture.
Is this a masterpiece destined to claim a spot next to Julia's Mastering the Art of French Cooking? No, but it is one I reach for over and over when planning a simple weeknight meal.
